Melba toast is eaten mainly as an accompaniment to soup. Dame Nellie's overweight fans may find in its light, non-calorific, qualities a suitable alternative to the more indulgent Pêche Melba.
Ingredients
6 slices white bread.
Method
Light the grill and set the oven to 150 C/300 F, Gas Mark 2.
Grill the bread on both sides until well browned.
While still hot, quickly cut off the crusts and split the bread in half horizontally.
Put the toast in the oven and leave until dry and brittle.
Will keep in a airtight tin but better eaten straight from the oven.
